There was a sandwich bread recipe for the tescoma ceramic baking pan, I modified it a bit and leavened it.
Sandwich bread with sourdough
I bake this bread when I realize in the morning that I need bread that day. Quick, easy sourdough bread, risen at room temperature.
Ingredients
- 450 g flour BL80
- 350 g milk lukewarm
- 150 g sourdough mature
- 30 g vaj
- 12 g salt
Instructions
- I don't fuss with this bread, because sandwich bread isn't about the big holey gut. You mix and puff all the ingredients together. Then let it rest for 1 hour in a greased rising bowl.
- Fold three times every 45 minutes. I just fold them into the bowl with a petal fold.
- The third Folding service leave to rest for 1 hour.
- Shape the bread. I usually rise it in a ceramic pan, line it with baking paper, butter the top, put the dough in, put the top on top and let it rise for about 2-3 hours, depending on the temperature. I used 25 degrees for 2 hours, when the dough was almost to the top of the tin I preheated the oven to 200 degrees on the bottom top baking programme.
- I brush the top of the bread with a beaten egg to give it a nice colour. I left the lid on and baked it for about 15 minutes at 200 degrees.
